Roasted Beets with Green Lentils and Braised Swiss Chard

Ingredients

• 1/2 cup green lentils

• 4 cups Swiss chard or chard leaves

• 3 large beets

• 3 tablespoons walnuts

• 1 tablespoon Extra Virgin Olive Oil (EVOO)

• A handful of fresh herbs - basil, dill, mint

• Pepper to taste

• A pinch of chipotle powder

• 1 tablespoon Italian spices


Step by step cooking process

1. Roasting beets : Peel the beets with a vegetable peeler and cut them into quarters. Place on a baking sheet, drizzle with 1 tablespoon of olive oil and roast in the oven at 200-220 degrees Celsius for 35-40 minutes or until golden brown.

2. Cook the lentils : Add 4 cups of water and 1 cup of lentils to a saucepan. Bring to a boil, then reduce heat to low and simmer for 18 minutes. Drain, rinse lentils, and add Italian seasoning.

3. Sauté the chard : In a frying pan, fry the finely chopped shallot and garlic, then add the chard leaves. Sauté gently for 1-4 minutes until softened.

4. Toast the nuts : Toast the walnuts over low heat until golden brown.

5. To assemble the dish : In a bowl, combine the sautéed chard, lentils, roasted beets and toasted walnuts.

6. Add spices : Add a handful of chopped basil or dill. Season with pepper and a pinch of chipotle powder.
