• 1 white sweet potato
• 1 small head of cauliflower
• 1/2 bulb fennel

• 1 head of butter lettuce
• 4 radishes
• 1/4 cup pomegranate seeds
• A large handful of mint leaves
• 1 jalapeno
• 1/4 cup toasted pumpkin seeds
Step by step cooking process
1. Prep the vegetables : Chop the sweet potato, cauliflower, fennel, and white onion. Place them on a baking sheet. Drizzle the vegetables with olive oil and squeeze lemon juice over the top. In a small bowl, combine the smoked paprika, ground cumin, and black pepper. Grate the ginger and add to the spice mixture. Sprinkle the spices and fresh herbs over the vegetables and mix well.
