Ingredients
• 1 bunch of collard greens
• A bowl of your favorite raw vegetables (eg shredded purple cabbage, carrots, cucumber, cilantro, microgreens)
• 1/2 avocado
For the red pepper sauce:
• 1 red pepper
• 1/2 cup macadamia nuts (soaked 1-2 hours)
• Water as needed
Step by step cooking process:
1. Preparing the cabbage leaves : Cut the stems out of the cabbage leaves and trim them thinly with a knife so that they are flat. This will help prevent them from breaking when you roll them.
2. Preparing the leaves : Place the cabbage leaves in a pan of boiling water for 1-2 minutes to soften slightly.
3. Slice Vegetables : Thinly slice all your favorite raw vegetables such as carrots, purple cabbage, avocado, cilantro, and cucumber.
4. Assembling the wraps : Place the filling on the bottom of the cabbage leaf.
5. Rolling the wraps : Carefully roll like a burrito, tucking the edges in to keep the filling from falling out. Refrigerate while you make the sauce.
6. Making the sauce : Cut and clean the red pepper. Place the pepper halves cut side down on a baking sheet and bake at 200 degrees Celsius for 20-30 minutes until the peppers are soft.
7. Make the sauce : In a blender, combine the roasted peppers, 1/2 cup macadamia nuts, and a splash of water. Start with 1 tablespoon of water and add more as needed until you reach your desired consistency.
8. Serving : Remove wraps from refrigerator and serve with red pepper sauce.
